JICAMA!!!!!!

What is Jicama you ask? It is a root vegetable also known as yam bean or mexican turnip that is high in potassium, fiber, and vitamin C! Apparently it is a cousin to the sweet potato and kinda looks like a turnip. Jicama can be cooked or eaten raw and is often found in salads! Could be used instead of a cracker or put on a veggie tray with hummus or dip. Today, I cut it up like matchsticks and put in our fruit and veggies for our lunches!!
kinda tastes like a white carrot...a little starchier though... is starchier a word? and has very little glycemic load and carb content... it has the texture somewhere between raw apple and raw potato....google it! Try some soon!!!
